Ingredients:
½ cup (100g) tapioca pearls
1 tsp saffron powder or food colouring (optional)
750 ml coconut milk
150g stevia sweetener (or preferred alternative sweetener)
½ tsp vanilla extract
100g diced mixed fruits (lychee & pineapple)
1 tsp agar agar powder
Extra diced fruits for serving (Strawberries, lychee & pineapple)
Instructions:
1. Cook the Tapioca Pearls:
In a medium pot, bring 4 cups of water to a boil.
Add the tapioca pearls and saffron powder (if using), and cook for 10–15 minutes, stirring occasionally, until translucent.
Remove from heat
Drain and rinse under cold water to stop cooking. Set aside.
2. Prepare the Coconut Pudding Base:
In a clean pot, combine the coconut milk, sweetener, and. Stir well.
Sprinkle in the agar agar and the collagen powder, and whisk to combine.
Bring to a gentle boil over medium heat, whisking constantly. Let it simmer for 3–5 minutes to activate the agar agar.
3. Add Flavour and Mix-ins:
Stir in the vanilla extract.
Add the cooked tapioca pearls and diced mixed fruits (lychee & pineapple). Mix thoroughly.
4. Set the Pudding:
Pour the mixture into serving glasses, ramekins, or a large dish.
Let cool at room temperature for 15–20 minutes, then refrigerate for at least 2 hours until fully set.
5. Serve:
